Andouille, Shrimp and Orzo Soup

Ingredients

  • 2 Tablespoons butter
  • 1 pound andouille sausage, cut in 1/2-inch dice (may substitute another smoked sausage)
  • 1 onion, chopped
  • 2 stalks celery including leaves, thinly sliced
  • 5 cloves garlic, minced
  • 3 Tablespoons flour
  • 10-oz can diced tomatoes with green chilies
  • 2 32 oz bottles Clamato juice
  • 2 14 oz cans vegetable broth
  • 1 cup orzo, uncooked
  • 1 pound shrimp, peeled and deveined
  • 1 bunch green onions, thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon cayenne
  • 1/4 cup fresh oregano, chopped
  • 1/4 cup fresh basil, chopped
  • 1 cup shredded Asiago cheese
  • Garnish: Fresh sprigs of oregano or fresh basil leaves
