Aunt Joan's Baked Stew

Ingredients

  • 1 pound cubed beef for stewing
  • 6 carrots, cut up
  • 3-4 potatoes, cut up
  • 1/2 Cup celery, sliced
  • 1 onion, cut up
  • 1 Cup (or more) tomato juice
  • 1 Cup beef broth
  • 1 Cup water
  • 1 Tb. sugar
  • 3 Tb. tapioca
  • 1 t salt
  • 1/2 t pepper
  • Frozen peas, thawed

Description

Beef Stewing Meat, Cut In Cubes, Is Combined With Carrots, Potatoes, Celery, Onion, Tomato Juice, Beef Broth And Peas. The Liquid Is Thickened With Tapioca As It Cooks.
