  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 10 ounce boxes frozen chopped spinach, thawed and well-drained
  • 1/2 teaspoon salt, optional
  • 20 large shrimp, peeled with tails off and deveined
  • 1/4 cup dried tomatoes in oil, drained and chopped
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/2 cup feta cheese, crumbled
  • 4 large fresh basil leaves, chopped


Frozen Spinach In A Casserole Is Covered With A Layer Of Dried Tomatoes, Kalamata Olives & Feta Cheese, Then Topped With Cooked Shrimp And Baked.
