Southwest Shrimp Salad on Cilantro Waffles

Ingredients

  • 3 eggs, beaten
  • 2 oz unsalted butter, melted
  • 2 cups buttermilk
  • 12 oz salad shrimp; peeled, deveined and cooked
  • 1 cup corn kernels, cooked and cooled
  • 1/2 cup mayonnaise
  • 3 limes, juiced
  • 2 shallots, minced
  • 2 scallions, sliced on bias
  • 3 scallions, sliced lengthwise
  • 1 red bell pepper, peeled and finely diced
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 10 sprigs cilantro, washed and picked
