  • 3 large cornichons or sweet pickles, minced
  • 2 tablespoons minced scallions
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 4 tilapia or other fish fillets, 1/2- to 1-inch thick
  • Salt and pepper
