Asian Maple Braised Pork Butt

Ingredients

  • 3 lb boneless pork butt, cut into fist sized pieces
  • Salt and pepper to taste
  • 2 yellow onions, rough chop
  • 1 bunch green onions, rough chop
  • 3 fresh ginger roots, peeled and sliced
  • 1 head garlic, smashed
  • 2 star anise
  • 1 tbsp mustard powder
  • 1 galangal root, chopped
  • 1/4 cup rice wine vinegar
  • 1/2 cup soy sauce
  • 1/2 cup hoisin sauce
  • 1 mashed lemongrass stalk
  • 1/2 cup brown sugar
  • 3/4 cup maple syrup
  • Chicken stock to fill pan 3/4 way up meat
