Ingredients

  • 1 medium can apricots in natural juice
  • 1/2 cup rice wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon finely minced ginger or 1/4 teaspoon ground ginger
  • 1/2 teaspoon finely minced garlic
  • Salad:
  • 1 1/2 pounds fresh green beans, ends trimmed; cut into 2-inch lengths
  • 5 cups mixed salad greens
  • 1 mango peeled, pitted and cubed
  • 3 Tablespoons dry roasted peanuts, coarsely chopped
