- 1 medium fennel bulb sliced into thin shavings
- 1/2 cup pine nuts, salted and toasted
- 1 firm avocado, small dice
- 2 ounces Peccorino cheese grated into thin shavings
- 1 large grapefruit, zest and pith cut away and flesh cut into small pieces
