Ingredients
- Crust for a 10-inch pie:
- 1 3/4 cups flour
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 4 Tablespoons ice water
- Filling:
- 2 cups sugar
- 3 Tablespoons cornstarch
- 1 pinch salt
- 4 egg yolks (keep whites for meringue)
- 2 1/2 cups milk of any kind (I use nonfat and it works fine)
- 2 teaspoons vanilla extract
- 1/2 stick of butter (1/4 cup), cut up
- 2 cups toasted coconut (sweetened or not)
- Meringue:
- 4 egg whites
- 1 pinch salt
- 1 pinch cream of tartar
- 1 cup confectioners sugar
- 1/4 cup untoasted coconut(sweetened or not)
