Iris's Coconut Cream Pie

Ingredients

  • Crust for a 10-inch pie:
  • 1 3/4 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 4 Tablespoons ice water
  • Filling:
  • 2 cups sugar
  • 3 Tablespoons cornstarch
  • 1 pinch salt
  • 4 egg yolks (keep whites for meringue)
  • 2 1/2 cups milk of any kind (I use nonfat and it works fine)
  • 2 teaspoons vanilla extract
  • 1/2 stick of butter (1/4 cup), cut up
  • 2 cups toasted coconut (sweetened or not)
  • Meringue:
  • 4 egg whites
  • 1 pinch salt
  • 1 pinch cream of tartar
  • 1 cup confectioners sugar
  • 1/4 cup untoasted coconut(sweetened or not)

Description

This 10-inch Pie Has A Creamy Filling With Toasted Coconut And An Egg White Meringue, Topped With A Little More Coconut.
