Ingredients
- Chicken:
- 4 boneless, skinless chicken breasts
- 1/2 tsp salt
- 1 tsp pepper
- 1/2 tsp red pepper flakes
- 1 clove finely chopped garlic
- 2 Tbsp butter or margarine
- 1 can (14 oz) quartered artichoke hearts, drained
- 1 cup fresh, cleaned, sliced mushrooms
- 4 strips cooked, drained, chopped bacon (optional)
- 2 Tbsp white wine
- 1/2 cup whipping cream
- 3/4 cup grated parmesan cheese
- Rice:
- 2 Tbsp vegetable oil
- 2/3 cups onion, finely chopped
- 1/4 tsp turmeric
- 1 cup white rice, long grain
- 1 cup water
- 3/4 cup chicken broth
- 2 stalks lemon grass 12" each cut into 2" long pieces or 2 tsp chopped lemongrass (in tube)
- 1/2 tsp salt
- 1 cup green onions, chopped
