- 2 yellow squash, roughly chopped
- 2 zucchini, roughly chopped
- 1 cup dried apricots and prunes, halved
- 1 15 oz can garbanzo beans, drained and rinsed
- 1 container nonfat Greek yogurt or low fat sour cream
- 2 lemons, quartered
- 3 cups cooked cracked wheat or couscous
