Casey's Moroccan Chicken Stew

Ingredients

  • 2 tbsp all purpose flour
  • Salt and pepper to taste
  • 1 1/2 lbs boneless skinless chicken breast, cut into 1 inch cubes and patted dry
  • 2 tbsp canola oil
  • 1 yellow onion, chopped
  • 1 carrot, chopped
  • 3 tbsp tomato paste
  • 1 tsp garlic, minced
  • 1 cinnamon stick
  • 1 1/2 tsp ground cinnamon
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp curry powder
  • 1 bay leaf
  • 1 14.5 oz can diced tomatoes
  • 1 14 oz can chicken broth
  • 2 cups water
  • 3 tbsp dark molasses
  • 2 tbsp dark brown sugar
  • 2 yellow squash, roughly chopped
  • 2 zucchini, roughly chopped
  • 1 cup dried apricots and prunes, halved
  • 1 15 oz can garbanzo beans, drained and rinsed
  • 1 container nonfat Greek yogurt or low fat sour cream
  • 2 lemons, quartered
  • 3 cups cooked cracked wheat or couscous
