Apricot-Pecan Bread

Ingredients

  • 1 cup apricot or peach fat-free yogurt
  • 3 Tablespoons (canola) oil
  • 3 Tablespoons apricot jam
  • 1/2 cup chopped dried apricots
  • 2 eggs, lightly beaten
  • 1/2 cup toasted pecans, chopped
  • 1/2 cup powdered sugar
  • 2 teaspoons rum or brandy
  • 1 Tablespoon toasted, finely chopped pecans

Description

Dried Apricots, Apricot Yogurt And Apricot Jam Are Added To The Batter Of This Lightly Frosted Quick Bread, Along With Toasted Pecans.
