- 4 to 6 ounces of either boneless pork or boneless chicken, or peeled baby shrimp
- 3 teaspoons coriander
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 tablespoons toasted sesame oil
- 2 tablespoons sliced ginger or 1 teaspoon ground ginger
- 3 cloves garlic, minced
- 2 tablespoons ginger-infused soy sauce
- 1 lb button or baby portobello mushrooms, washed and diced small
- 1 16-oz bag cole slaw mix
- 12-16 spring roll wrappers
- 1 egg, slightly beaten
- 1/4 cup vegetable oil
- Duck sauce and/or soy sauce (for dipping)
Description
