Artichoke, Goat Cheese, and Pine Nut Bruschetta


  • Handful of Pine Nuts
  • 1 medium-size goat cheese log (herbed goat cheese is fine)
  • 2 cloves of garlic
  • Good quality olive oil (1/4 of a cup or so)
  • 1 loaf French-style bread
  • 1 can of artichoke hearts (packed in water)
  • Good quality parmesan cheese (1/4 cup)
  • Fresh parsley (for garnish)


Toasted Slices Of French Bread Are Spread With Herbed Goat Cheese And Topped With A Mixture Of Chopped Artichoke Hearts, Garlic, Pine Nuts And Parmesan Cheese.
