Quick Fried Rice

Ingredients

  • 4 cups cooked white or brown rice*
  • 2 tablespoons toasted sesame oil
  • 2 large carrots, peeled and shredded
  • 2 teaspoons minced fresh garlic, about 1 large clove
  • 2 tablespoons grated fresh ginger
  • 2 cups diced cooked ham, chicken or pork
  • 4 green onions, sliced
  • 1 10-ounce package petite peas, defrosted
  • 3-4 tablespoons regular or reduced-sodium soy sauce
  • 2 eggs, beaten
