Ingredients

  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1 package pork tenderloin (2 tenderloins), cut into 1-inch pieces
  • 1 large onion, sliced
  • 3 cloves garlic, mined, about 1 ½ teaspoons
  • 1/4 cup all-purpose flour
  • 1 cup apple cider
  • 1 cup dark beer
  • 2 tablespoons Dijon mustard
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon dried thyme leaves
  • 1 large sweet potato, peeled and cut into 1-inch pieces
  • 5 parsnips, peeled and cut into 1-inch pieces
  • Salt and freshly ground black pepper
