  • Zest from 1 lemon
  • Zest from 1 lime
  • 2 tablespoons extra virgin olive oil
  • 1 3-pound skinless salmon fillet
  • Sea salt and freshly ground black pepper
  • 3 tablespoons olive oil
  • 3 tablespoons butter
