- 1 1/4 cups all-purpose flour
- Vegetable oil for frying, plus ¾ cup for making the roux
- 1 cup finely chopped onions
- 1 cup finely chopped celery
- 1 cup finely chopped green bell peppers
- 4 cups reduced-sodium chicken broth
- 1 cup finely chopped green onions
