Stuffed Portobella

Ingredients

    4 large portobella mushrooms, washed and dried, stems removed
    1-1/2 cooked chicken breasts - cooked with bone and skin removed - finely chopped
    1 tablespoon minced garlic
    1 cup finely chopped onion
    2 bunches (or more) fresh spinach
    2 tablespoons extra virgin olive oil (or less)
    1/2 (10-3/4 oz. size) can low sodium condensed cream of mushroom soup (or other condensed soup) - use just enough to make stuffing ingredients hold together a little bit
    Seasonings to taste. I use black pepper, poultry seasoning, a little more thyme
    1 teaspoon grated parmesan cheese
