Tofu Fried Rice With Seiten

Ingredients

    Tofu Fried Rice

    For the scrambled tofu:
    ½ c. crumbled firm or extra-firm tofu
    2 tsp. canola or peanut oil
    1 tsp. prepared yellow mustard
    ¼-½ tsp. black salt (or kosher salt, if you can’t find any)
    ¼ tsp. black pepper
    ¼ tsp. onion powder
    3-5 drops organic yellow food coloring (optional)
    2 T. plain unsweetened almond milk

    For the rice:
    3 T. canola or peanut oil
    2 cloves garlic, minced
    1-2 scallions, sliced
    4 c. cooked rice (brown or white)
    3 T. soy sauce
    3 T. filtered water
    1 (16 oz.) box frozen peas and diced carrots
    1 recipe Porky Chinese Seitan strips (recipe follows)




    Porky Chinese Seitan
    (Vegan Char Siu/Cantonese Barbecued Pork)

    For the seitan:
    ¼ c. TVP granules
    2 T. canola oil
    3 T. vegetable stock or water, warmed
    1 T. soy sauce
    2 tsp. rice vinegar
    1 tsp. vegan Worcestershire sauce
    2 cloves garlic, grated or pressed
    ½ tsp. grated fresh gingerroot
    1 tsp. onion powder
    ½ tsp. dry mustard
    ½ tsp. organic brown sugar
    ¼ tsp. kosher salt
    ½ c. vital wheat gluten
    ¼ c. chickpea flour
    1 tsp. cornstarch
    Filtered water, as needed (a couple of tablespoonfuls)
    2 T. canola oil, for frying

    For the “sauce”:
    1 T. filtered water
    1 T. soy sauce
    1 T. dry sherry or Irish whiskey (I use Jameson)
    2 tsp. agave nectar
    1 tsp. rice vinegar
    1 tsp. hoisin sauce
    ¼ tsp. sesame oil
    ¼ tsp. organic red food coloring (optional)
    ¼ tsp. garlic powder
