Apple Walnut Muffins


    1.5 Baking mix
    2 tsp baking powder
    1 tsp baking soda
    1 tsp cinammon
    1/4 tsp salt
    3/4 cup low fat buttermilk
    3 tbs. extra light olive oil
    2 tbs brown sugar
    2 tbs splenda
    1 egg beaten
    1/2 medium apple chopped finely
    1/2 cup chopped walnuts
    Combine all ingredients except flour, apples & nuts. Then add flour just til combines, then add nuts & apples - do not overmix.
    Pour into 12 muffin tin and bake at 400 degrees for about 12 minutes or until toothpick comes out clean.
    125 calories per muffin
