Moroccan-inspired Vegetable And Chickpea Stew

Ingredients

    1 tbsp olive oil
    3 shallots
    1 large carrot
    1small red bell pepper
    1 garlic clove, minced
    1 tsp minced ginger
    1/2 tsp ground cinnamon
    1/2 tsp ground cumin
    1/2 tsp paprika
    1/2 tsp tumeric
    8 ounces green beans cut into inch pieces
    1 1/2 cups slow-cooked or 15.5 ounce can chickpeas, drained and rinced
    one 14.5 ounce can diced tomatoes, drained and chopped
    1 1/2 cups vegetable stock
    1Tbsp lemon juice
    salt & pepper to taste
    1/2 cup frozen peas, thawed
    1/2 cup mixed dried fruit (apricots, apple slices, prunes, raisins, etc. chopped)
    1/4 cup olives, drained, halved and pitted
    1tbsp minced fresh parsley leaves

Description

This Is A Great Fall Recipe. Sprinkle Olives And Parsley. Make Sure To Add A Bit Of Harissa Sauce To Give It Some Heat.
