Ingredients
- 1 yellow onion, chopped
1 teaspoon olive oil
1/2 bag baby carrots, sliced in half lengthwise
4 small potatoes, diced
2 packages prepared seitan (4 oz each)
2 cups vegetable stock (I make my own, but you could use low-sodium canned stock)
1 teaspoon dried thyme
1 bay leaf
2 cloves garlic
2 tablespoons low-sodium tamari (could substitute with low-sodium soy sauce if you can't find tamari)
ground black pepper
