Yat's Chili Cheese Etouffee

Ingredients

    1 stick butter
    ½ cup flour

    1 bunch green onions, chopped
    1 green pepper, diced
    1 onion, diced
    1 large celery stalk, diced
    2 tsp minced garlic
    1 can diced tomatoes with green chilies

    ½ tsp dried thyme
    1 tbsp tomato paste
    1 tsp dried basil
    ¼ tsp black pepper
    ¼ tsp white pepper
    ¼ tsp cayenne pepper
    3 cups chicken stock
    ---------------------------------------------------
    3 cups aged (sharp) cheddar cheese, shredded
    1 cup half-and-half or milk
    1 tsp chili powder
    pinch of ground coriander
    pinch of ground cumin
    pinch of ground cloves
    dash of Worcestershire sauce
    dash of Tabasco sauce
    ---------------------------------------------------
    1 lb cooked crawfish, shrimp or chicken cut into bite-size
    pieces
    Cooked white rice, to serve
    Dry sherry and chopped green onions to garnish
