Greek Chicken Piccata

Ingredients

    1 boneless skinless chicken breast, cut into even chunks
    1/2C chicken broth
    1/2 squeezed fresh lemon
    1tsp fresh oregano
    2T chopped pitted kalamata olives (garnish)
    2T feta cheese (optional)

    1/2C vine ripe tomatoes diced
    Season tomatoes with
    1/2tsp each dried oregano, basil and garlic powder
    *to soften tomatoes add 2T vinegar and seasonings to
    cut tomatoes and marinate over night

    Spaghetti noodles cooked al dente (about 12 min)
    in boiling salted water with 2T olive oil

    In sauce pan combine chicken broth and lemon juice over med heat and reduce by half. Add chicken pieces and cook until done (about 8-12 min) add 1tsp fresh oregano and tomato mixture until tomatoes are warmed through (3 min) serve over spaghetti noodles and top with kalamata olives. Add feta over top

    Variations:
    1/4C chicken broth
    1/4C white wine (such as a Chablis)
    1/2 fresh squeezed lemon

    Minus out the olives and replace with capers add fresh bell peppers, zucchini, mushrooms, asparagus, or broccoli (any one or mixture of favorites)
    saute vegetable(s) of choice (fresh bell peppers, zucchini, mushrooms, asparagus, or broccoli (any one or mixture of favorites) in 1T olive oil, 1/2tsp minced garlic for 8-10 min. Serve over noodles with fresh grated parmesan for a more traditional piccata sauce.
