    1 cup of wild or basmati rice
    1 tbsp extra virgin olive oil
    2 garlic cloves, minced
    1 1/4 pounds of boneless, skinless chicken breasts
    2 carrots, diced
    2 tbsp finely chopped fresh rosemary or 1 tbsp dried
    1/4 cup of Tamarind Chutney (or substitute with orange marmalade)
    1/4 cup Dijon mustard or deli style
    1/8 tsp black pepper
