Pepper Shrimp Pasta

Ingredients

    13.25 oz box of whole grain thin spaghetti (or angel hair)

    2 tablespoons olive oil (plus a little more for the pasta)

    1/2 cup chopped onion

    2 cloves garlic, minced

    1.5 cups chopped/sliced peppers (for a milder dish use red/orange/yellow bell peppers, or add fresh hot peppers for a spicer dish)

    1 lb. large peeled and deveined shrimp

    ~2 cups snow peas (or some other fresh green veggie, through you may have to adjust cooking times)

    0.5 to 1 tsp. Tony Chachere's Original Creole Seasoning (or similar spicy-type Cajun/Creole seasoning)

    1/4 tsp. black pepper

    1/4 tsp. dried basil

    Experiment by adding different kinds of peppers and additional veggies like mushrooms, broccoli, celery, scallions, etc. (though these extras aren't included in the calorie count)
