Kari's Energy Bars

Ingredients

    1/2 cup quinoa (dry), cooked in 1 cup water
    1/2 cup slivered almonds, toasted
    1/4 cup pepitas (pumpkin seeds), toasted
    3 Tbsp water
    1 tsp Chia seeds
    1 cup white whole wheat flour
    1/2 cup brown sugar
    1/3 cup oat bran
    1/4 cup coconut flour
    3 Tbsp cornmeal
    1/2 tsp baking powder
    1/2 tsp salt
    1/2 tsp cinnamon
    8 dry Mission figs, chopped (about 1/2 cup)
    1 medium very ripe banana
    1/4 cup warm water
    2 tsp vanilla
    1/2 cup raisins

Slightly Sweet, These Energy Bars Are Made With Quinoa, Oat Bran, Figs, Raisins, Almonds And Pepitas. Good For A Snack Or Breakfast. Recipe Makes 16 Bars.
