TAKE 1/2 JAR HERO APRICOT JAM AND MIX IT IN A SMALL BOWL WITH 2 TBSP. SOY SAUCE. RUB THIS MIXTURE ALL OVER CHICKEN. TAKE A WHOLE LEMON, CUT IT IN HALF, AND PUT IT INTO THE CAVITY OF THE CHICKEN.
BAKE AT 400 DEGREES FOR ABOUT AN HOUR AND A HALF (UNTIL ALL JUICES RUN CLEAR - CUT INTO THE LEG FIRST TO SEE IF MEAT IS DONE - I USUALLY COOK A 6 LB. ROASTING CHICKEN FOR 2 HOURS)
REMOVE CHICKEN FROM PAN AND TAKE ALL THE JUICES AND ADD A TSP. OF FLOUR, COOK OVER LOW HEAT JUST TO MIX, AND SERVE OVER CHICKEN.
