Gingerbread Apple Pie

Ingredients

    Crust:
    1.5 cups of all purpose unbleached flour - 1.5 cups of pastry flour
    1/2 cup brown sugar - 1/2 cup date sugar
    1 tsp ground ginger
    1 tsp ground cinnamon
    1/4 tsp allspice
    1/2 tsp slad
    1 tsp baking powder
    1/2 cup nonhydrogenated margarine, softened - 1/4 cup earth balance, 1/4 cup applesauce
    1 tbsp molasses - 1/2 tbsp molasses, 1/2 tbsp agave
    2 tbsp cold water - might not need this much - try 1 at a time

    Filling:
    2 lbs of granny smith apples
    1/2 cup brown sugar - 1/2 cup date sugar
    1 tsp ground cinnamon
    1/4 tsp nutmeg
    1/4 tsp allspice
    1/2 tsp ground ginger
    pinch ground cloves
    1/4 cup pure maple syrup - 2 tbsp maple syrup and 1 tbsp agave
    1 tbsp canola oil - 1/2 tbsp oil
    2 tbsp tapioca starch or arrowroot - 2 tbsp potato starch

    just topping
    1/2 cup of crumbs
    2 tbsp date sugar
    1.5 cups of all purpose unbleached flour - 1.5 cups of pastry flour

    .25 tsp ground ginger
    .25 tsp ground cinnamon
    1/8 tsp salt
    .25 tsp baking powder
    1 tsp earth balance
