Thai Chicken Vegetables With Peanut Sauce

Ingredients

    4 large chicken breasts
    4 cups cooked whole wheat or whole grain fettucini or rice noodles
    1/2 cup peanut butter
    1/2 cup brown sugar
    1/4 cup apricot jam
    1/3 cup soy sauce
    2 T cornstarch
    1-2 tsp. cayenne or 1-2 T crushed red pepper (to taste)
    1-1/2 cups water
    1/4 cup salted and chopped peanuts
    2 cups red/yellow/orange/green pepper (or whatever you have)
    3 cups broccoli (small pieces)
    2 cups zucchini or crook neck squash
    2 cups carrots
    2 cups mushrooms
    2 cups celery
    1 pint grape tomatoes cut in half
    1 cup green onion/shallots (or white onion sauted)
    4-6 cups fresh spinach
