Amaranth And Fish Soup


    2 tablespoons Unsalted Butter
    2 leeks, trimmed and chopped
    3 stalks celery, chopped
    small red bell pepper, cored, seeded, finely chopped
    salt and black pepper, to taste
    4 cups fish or clam broth (or chicken)
    3/4 cup of amaranth (whole grain similar to quinoa)
    1/4 teaspoon oregano
    4 cups fresh or frozen corn
    3/4 pound white fish (haddock, cod, or similar)
