Mini Denver Frittatas

Ingredients

    INGREDIENTS (Makes 4 Frittatas... 2 are a serving)

    2 sticks Asparagus
    1 piece Canadian Bacon
    2 Sweet Peppers (those little tiny ones... or just chop up about, let's go with 1/4 cup big orange pepper)
    1/4 cup Onion, chopped
    1/2 cup egg whites
    1 large egg
    1 Tbspn Half and Half (skim will work if you aren't going low carb)
    2 Tbspn crumbled goat cheese
    1 Tbspn Chives
    Italian Seasoning
    Garlic Powder
    Salt and Pepper
    4 Grape Tomatoes
    1/4 cup shredded American or Cheddar Cheese
