1 pound of asparagus, ends removed, cut into thirds diagonally**
2 bell peppers â (can use any color)
4 scallions â sliced diagonally
* Chinese snow peas - can use these to replace the asparagus
Water chestnuts â sliced
Chow Mein Noodles
Dressing
1 cup Vegetable oil
¼ cup apple cider vinegar
1/3 cup soy sauce
3 tablespoons dark sesame oil
(NOTE: it is not called dark sesame oil it is just sesame oil but make sure that it is the dark (brown) one)
1 tablespoon honey
2 garlic cloves âminced (or 1 teaspoon of minced garlic)
1 teaspoon peeled, grated fresh ginger
1 tablespoon white sesame sees, toasted
(NOTE: To toast the seeds, place them in a dry sauté pan and cook over medium heat for about 5 mints or until browned)
½ cup smooth peanut butter
4 teaspoons salt
1 teaspoon pepper
