Nigerian Kidney Bean Stew With A Peanut Sauce

Ingredients

    1 1/2 cups dried kidney beans
    1 small green pepper, seeded & diced
    2 teaspoons salt (to taste)
    1 teaspoon ground cumin
    2 tablespoons oil
    1/2 (5 1/2 ounce) can tomato paste
    1 medium onion, finely chopped
    2 garlic cloves, crushed
    1/4 teaspoon cayenne (to taste)
    1 teaspoon fresh lemon juice
    1/4 cup peanut butter, smooth is best
    1 cup frozen corn
