Acorn Squash Curry


    2 Acorn Squash (4 in diameter) or 1 large (6-8 in diameter)
    1 C. Water

    2 T Olive Oil
    1 medium carrot, sliced
    1 long Celery stalk, sliced
    1 Medium Onion, diced
    2 Cloves Garlic, finely chopped
    1 C Shitake Mushrooms, sliced (about 3-4 oz unsliced)
    1/4 C White or Marsala Cooking Wine

    2 T Curry powder
    2 T Brown Sugar
    2 t Salt
    Black Pepper, to taste


This Recipe Can Be Used By Itself As A Soup Or Add Tofu Or Chicken And Rice For A Delicious Curried Dish
