Ginger Ale Fruit Cake (uniced)

Ingredients

1 1/4 cups sultanas

1 1/4 cups dates

1 1/4 cups currants

1 1/4 cups raisins

1/4 cup mixed peel

300ml ginger ale

225g butter

1 cup sugar

4 eggs

2 cups plain flour

1 tsp baking powder

1/4 tsp grated lemon rind

1/2 tsp vanilla essence

1/2 tsp almond essence

This Is A Lovely Moist And Tasty Fruit Cake. It Requires Some Forethought As The Fruit Needs To Be Set To Soak The Night Before.
