Almond Crusted Salmon


    chop the almonds, mix almonds, 2 tablespoons chopped parsley, 1 tsp grated lemon peel, 1/8 tsp salt and 1/8 tsp pepper. Put on plate. Put flour on another plate. Sprinkle salmon with salt & pepper. Dredge salmon in flour, shake off excess. Lightly brush 1 side of almon with beatren egg. Press brushged side of salmon into almond mixture. Heat 1-2 tbsp oil in a heavy large skillet, add salmon to skillet, almond-side down, cook about 5 nminutes. Turn over, cook about 5 minutes.
