South African Slow-cooked Bobotie

Ingredients

    2 TBSP olive Oil
    1 large yellow onion, chopped
    1 TBSP curry powder
    1 lb vegetarian burger crumbles
    4 cups diced fresh bread crumbs
    8 dried apricots, soaked for 10 mins in hot water, drained and chopped
    salt & pepper freshly ground
    1 1/2 cups vegetable stock
    1/3 apricot jam
    1/3 cup almond butter
    1 TBSP lemon juice
    1/4 cup sliced almonds, toasted
