Ingredients
- 40 oz can sweet potatoes in syrup (yams)
14.5 oz can carrots
14.5 oz can diced tomatoes
1 lg onion, chopped
3 cloves garlic, minced
2 tbsp olive oil
.5 tsp cinnamon
1 tsp curry powder
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground ginger
1 tbsp salt
.25-.5 tsp ground red pepper (cayenne)
.5 cup peanut butter (may use smooth or chunky, as preferred)
Chop onions and mince garlic
Saute in olive oil with spices
Add canned sweet potoes (yams), carrots and diced tomatoes (include the liquid in the cans)
Heat through and simmer 5-10 minutes
Pour into food processor or blender and blend until smooth
Pour back into pan and stir in peanut butter
Garnish with chopped fresh cilantro (dried may be substituted)
Serve with pita bread, corn bread, flat bread, etc. Best when served hot.
You may adjust the amount of hot red pepper to taste. We like it spicier, but tastes vary. Also, we prefer the ground cumin and coriander to whole seeds (but it wasn't an option on the ingredient menu here).
