Awesome Multigrain Apricot Muffins


    1 cup chopped Apricots
    3/4 cup Red River Cereal
    1-1/2 cups hot water
    1/2 cup packed dark brown sugar
    1 tsp lemon juice

    1-1/2 cups Oat bran
    3/4 cup Whole Wheat pastry Flour
    1-1/4 tsp baking soda
    1/2 tsp salt
    1 egg
    1/2 cup Honey
    1 cup (8 oz.) vanilla flavored nonfat yogurt
    1/2 cup organic coconut oil - melted down
    1/2 cup Unsweetened Applesauce


I Found A Recipe, Similiar To This One, On The Back Of The Cereal Box. After Substituting Whole Wheat Pastry Flour For White Flour And A Few Other Ingredients, It Became A Muffin
