Tuna & Avocado Salad

Ingredients

    2 x 185g tins tuna in spring water, drained & flaked
    1 x 4oog tin cooked cannellini beans, drained & rinsed
    1 cos lettuce, shredded
    12 cherry tomatoes, halved
    2 spring onions, thinly sliced
    1/4 cup picked flat leaf parsley
    2 Lebanese cucumbers, cut into long shards
    1 avocado, sliced into wedges
    2 eggs, hardboiled & quartered
    100g black olives

    2 tsp Dijon mustard
    1 clove garlic, crushed
    2 Tbl lemon juuice
    4 Tbl olive oil
    Sea salt & freshly ground black pepper
