    * 1 lb fresh asparagus, trimmed

    * 1/4 c shallots, minced

    * 3 TBSP tarragon-white wine vinegar (find among herbal vinegars)

    * 4 tsp fresh tarragon, chopped, or 1 1/4 tsp dried tarragon

    * 7 TBSP hazelnut, walnut or olive oil (calorie count is based on walnut oil)

    * 4 c baby lettuces or inner leaves of curly endive

    * 1/4 c hazelnuts, toasted, husked and coarsely chopped

    * 1 tsp Dijon mustard

    * Salt and Pepper, to taste
