Ingredients

    4 c zucchini
    2 med onion
    4 tbsp olive oil
    4 tbsp butter
    1/2 c chopped scallions
    1/2 cup chopped parsley
    2 cloves garlic, minced or pressed
    4 tbsp flour
    4 cups chicken stock
    5 oz cream cheese, room temperature
    1 cup milk
    4 tbsp dry sherry
    1/2 c grated fresh parmesan cheese
    4-8 anchovy fillets, chopped fine (optional)

Description

Fry Zucchini And Onion In Oil/butter Until Soft But Not Brown. Add Garlic, Scallions, Parsley, Fry 3 Min. Add Flour And Mix Into Veggies Until Cooked (2 Min). Add Stock, Bring To A Boil And Reduce Heat To Simmer 15 Min. Add Cream Cheese In Chunks With
