    1 Florida avocado, peeled, cut into 1/2-inch cubes
    1 cup crumbled reduced fat gorgonzola cheese
    14 slices cooked bacon, crumbled
    4 large chopped hard-cooked eggs
    1 cup finely minced red onion
    1 cup chopped plum tomatoes

    Dijon Vinaigrette (use sparingly)
    1/3 cup white balsamic vinegar
    1/4 cup Dijon mustard
    1 packet Good Season Italian salad dressing mix
    1/2 cup extra virgin olive oil
