Summer Kitchen Sink Pasta (chef Meg's Makeover)

Ingredients

    12 oz whole wheat penne
    1 T olive oil
    2 zucchini, cubed
    1 t thyme, dried
    pinch salt
    3 green onion (scallions), sliced
    reserve green part for garnish
    3 garlic cloves, chopped
    8 cremini or baby portabellas, quartered
    1 red bell pepper, deseeded and chopped
    4 oz artichokes, frozen
    4 oz green and yellow beans, frozen
    2 lemons, zested and juiced; reserve zest for garnish
    1 T parsley chopped
    2 T capers, drained and rinsed
    1/4 c feta cheese
    10 basil leaves, fresh shredded or 1 t basil, freeze-dried
