* Chickpeas (garbanzo beans), 1.875 cup (1 Can)
* Beans, red kidney, 1.875 cup (1 Can)
* Yellow Sweet Corn, Frozen, 2 cup kernels
* Onions, raw, 1 large
* Garlic, 3 cloves (use anywhere from 2-4 cloves)
* *Canned diced tomato, no salt added, 1.75 cup (1 can)
* Cherry Tomatoes, Fresh, 1 Tomato, 20 serving (optional but delicious)
* *Extra Light Olive Oil, 1 tbsp
* *Cumin seed, 1 tsp (ground cumin)
* Pepper, red or cayenne, 1 tsp (cayenne)
* Paprika, 1 tsp
* Chili powder, 2 tsp
* *Vegetable boullion - 1 cube, 1 serving (dissolve in 1 c boiling water)
Salt and Pepper to taste
Optional:
Top with shredded jack or cheddar cheese and fresh sliced avocado (not included in nutritional info)
