Ingredients

    1 lb fresh asparagus, trimmed and cut in 3/4 " pieces
    2 medium onions, halved and sliced thin
    1 small fennel bulb, sliced
    2 tbsp olive oil
    8 oz uncooked whole wheat penne pasta
    4 medium tomatoes, seeded and diced
    12 pitted greek black olives, sliced
    1 cup fresh parsley, minced
    VINAIGRETTE
    1/4 cup olive oil
    1/4 cup lemon juice
    2 tsp minced garlic
    1/2 tsp dijon mustard
    1/2 tsp kosher salt
    1/4 tsp pepper
    1 cup-4 oz crumbled feta cheese
