4 small new Red Potatoes, Quartered
2 1/2 c Tomato puree
1 TBS Tomato paste
1 TBS Ketchup
.25 tsp Cayenne pepper
1/3 c chopped dried Apricots
3 c canned Chickpeas (2 cans drained & rinsed)
Salt & ground Black pepper (optional)
1 TBS Cilantro, chopped for garnish
