    1/8 cup olive oil
    6 oz bocconcini or mozzarella, cut into 1/2" cubes
    1 15- to 19-ounce canned garbanzo beans, rinsed & drained
    2 ounces sliced hard salami, cut into strips
    1/2 jar marinated artichoke hearts, chopped
    1/2 16-ounce jar pepperoncini (hot tuscan peppers), drained (about 12)
    1/2 teaspoon dried hot red pepper flakes
    1 cup fresh flat-leaf parsley (loosely packed), minced
